Welcome former Head Chef of 'Dine by Peter Gordon' Mark Harman. Originally from Palmerston North, Mark has a slew of awards to his name having won the Gold Medal at the 2010 Culinary Awards and a regular winner of the Beef+Lamb Hallmark award.
Aside from recently being the Head Chef of Dine, Mark worked six years at the Coachman in Palmerston North, Mark has also worked at Te Papa with Peter Thornley, Bouquet Garni with Rex Morgan and Huka Lodge with Nicholas Watt. While working at Huka Lodge, he cooked for the Queen during her visit to New Zealand. Offshore, he has worked at the five star Powerhouse Boutique Hotel in Tamworth, Australia and the Hyatt at Sanctuary Cove Gold Coast. A year
working in the Caribbean at the luxury Amanyara hotel was for Mark 'an amazing experience'. "The Aman chain is frequently named the number one hotel chain in the world - at the Amanyara, the dinner menu which comprised four entrées, four mains, and four desserts, changed every day. We cooked for at least 120 guests which meant that the time spent in the kitchen was
huge," says Mark.
The Brigade 6 was amassed as a brainchild/concept of Japanese culinary sensation, Sachie Nomura they are looking to revolutionise the foodie scene by running a series of boutique fully-hands-on cooking classes where foodies can attain a guest 'Black Belt' in Asian cooking. All members of the Brigade are current Finalists or Winners of awards in the 2011 NZ or Australian

Mark is doing 1 class of Each Country's Cuisine only as he 'cooks around the Orient' - his special interpretations of Japanese, Chinese, Thai, Vietnamese & Malaysian. Places are extremely exclusive so participants be fully hands-on and have intimate time with each chef (so they can ask for those secret tips!) - 16 per class only.
